"Cecina with Tacacho and Chorizo"
It's one of the tastiest dishes in the Peruvian Jungle. It's a simple, fast-to-prepared dish, rich in proteins, minerals and fats that are eaten on a daily basis.
The "Tacacho con Cecina" is a typical dish of Peru's gastronomy. It's native to the Peruvian Jungle area and widely spread throughout the rest of the country. The term "Tacacho" probably derives from the quechua "Taka chu", which means "the beaten".
The dish usually consists of two tacacho balls, a piece of cecina and chorizo. However, this proportion may vary at the request of the diner.
For the elaboration of the tacacho a dough is prepared composed of green banana roasted, cecina and chorizo, oil and salt. To tacacho, pork grease is added.
The basis of this preparation is green bananas. Then, the cecina or chorizo is prepared to accompany the tacacho. They usually prepare on the grill. The cecina and chorizo made in the Peruvian Jungle include spices other than traditional ones. It can be served with chonta salad and cocona sauce.
